I discovered Chia puddings quite awhile ago and just fell in love with them. Chia seeds have become increasingly popular as a "super food". They are rich in omega 3 fatty acids, protein, calcium and fiber. In addition, they are gluten free. This super food isn't just for grown ups, kids love them too!
Chia seeds can be added to yogurt, smoothies, or mixed with a variety of milks, fruits, sweeteners and spices to create delicious puddings for you and your kids. When soaked for a period of time (I recommend overnight), the seeds absorb the liquid and turn into a gel similar to tapioca. This consistency is perfect for a Squooshi.
This is a very simple pudding recipe that is refreshing, light, and packed with nutrition. I usually make this at night and it is ready in the morning. However, it is so good that after filling up Reid's Squooshi in the morning, I usually eat the rest and then end up wishing I had more in the evening.
Lemon Chia Pudding
2.5 C vanilla coconut milk
1/2 C chia seeds
3 T agave
2 t lemon zest (you can also use orange zest if you prefer)
Combine all ingredients in a glass mason jar or similar, tighten the lid and shake, shake, shake. I usually refrigerate mine and then come back in another 30 minutes and shake it again. You want to make sure the chia seeds are evenly distributed and not sticking together.
Refrigerate 4-6 hours and then spoon into a Squooshi, or, right into your mouth!
