It's soup weather here - cold, damp and dark - and I love putting soups in my Squooshi refillable baby food pouches. They are quick, easy and the whole family can enjoy the same meal (just in different consistencies and receptacles!). Here is a Lentil Soup recipe that I made today and will be enjoying tonight.
1/2 medium onion, chopped (about 1 cup)
1 tablespoon olive oil
1 medium red or white potato, peeled and cubed
1/2 cup red lentils
2 1/2 cups water
2 carrots, sliced
1/2 cup fresh spinach or kale
1 garlic clove, minced
1 teaspoon ground cumin
salt and pepper to taste
In a medium-size pot, saute onion in olive oil until soft, about 5 minutes.
Add all the other ingredients.
Cover and simmer for approx. 30 minutes.
Using your blender or other food-pureeing device, puree to desired consistency and fill your Squooshi.
Makes approximately three servings - in my house that is 2 large bowls and one large Squooshi.
