← Lentil Soup Carrot, Apple & Ginger →


When I am at the grocery store, I always check out the ready-made pouches for recipe ideas. I recently saw a green bean, zucchini and potato blend and decided to try it. I usually make my Squooshis in large batches to freeze every 10-14 days but I’ve experimented with freezing potato leek soup and it did not go well so, for this blend, I made a small batch that I could keep in the fridge for the next two days.


The finished puree was delicious warm and my son loved it but once it cooled down I thought it tasted too green-beany so I added 3 tablespoons of applesauce.

Green Bean, Zucchini and Potato Puree
14 green beans
1 medium sized white potato
half a medium zucchini


Steam potato until tender, adding green beans half way through and the zucchini at the end. Puree with a small amount of the steaming water until desired consistency is achieved – I used a Vitamix with a 1/2 cup of the steaming water.


This filled two small Squooshis and one large Squooshi.
